Grape-Nuts Tabbouleh Salad
A filling option for lunch or as a side.
TOTAL TIME: 70 MAKES: 6 servings
INGREDIENTS
2 cups cherry tomatoes, quartered
1/2 cup finely chopped yellow or white onions
1/2 cup finely chopped green onions
1/2 cup finely chopped fresh parsley
1/4 cup fat-free Italian salad dressing
2 Tbsp. lemon juice
4-1/2 tsp. finely chopped fresh mint
1 cup Grape-Nuts Cereal
DIRECTIONS
COMBINE all ingredients except cereal in large bowl; cover. REFRIGERATE at least 1 hour to allow flavors to blend. STIR in cereal 30 min. before serving. Let stand at room temperature until ready to serve.
